Guide to Drying Potatoes with Drying Equipment

I. Preparation

1. Select Potatoes: Choose potatoes that are free from damage, sprouting, and rotting. Try to select potatoes of relatively uniform size so that they can be heated more evenly during the drying process.

2. Wash Potatoes: Thoroughly wash the surface soil and impurities of the potatoes with running water. If there are stubborn stains, you can gently scrub them with a brush.

3. Slice or Dice Potatoes: According to the desired form of potato chips or dried potatoes, cut the potatoes into slices about 0.3 - 0.5 cm thick, or dice them into small cubes of about 1 - 2 cubic centimeters. After cutting, soak them in clean water to prevent oxidation and discoloration.

II. Drying Steps

1. Preheat the Drying Equipment: Preheat the drying equipment to 60 - 70°C in advance. This allows the potatoes to quickly enter the drying state after being put into the drying equipment, reducing the drying time and ensuring the drying effect.

2. Drain Moisture: Take out the potatoes from the clean water and use a clean towel or kitchen paper to fully absorb the surface moisture to avoid excessive moisture affecting the drying efficiency.

3. Arrange Potatoes: Arrange the potatoes evenly on the trays of the drying equipment. Note not to overlap them, ensuring that each slice or piece of potato can fully contact the hot air for uniform drying.

4. Set Drying Parameters: Set the temperature at 60 - 70°C and the time for 4 - 6 hours. During the drying process, you can check the drying condition of the potatoes every 1 - 2 hours and adjust the drying time appropriately according to the actual situation.

5. Flip Operation: After 2 - 3 hours of drying, carefully flip the potatoes so that the other side can also be evenly heated and dried.

III. Post - drying Treatment

1. Cooling: After the drying is completed, take out the potatoes from the drying equipment and place them on a clean drying net to cool naturally. During the cooling process, the moisture in the potatoes will be further evenly distributed.

2. Storage: Put the cooled dried potatoes into a sealed bag or container and store them in a cool and dry place to avoid moisture absorption and spoilage.
